Branding the Region
“While celebrating
the region's culinary awakening,
Hudson Valley Mediterranean is first
and foremost a cookbook, focusing on
fresh, simply prepared food--the kind
you want to cook. No fussy sauces. No
complex recipes and some favorite dishes
from Gigi, including the famous Gigi
Tuscan fries, Barbina salad and
Bolognese sauce.”

“Laura Pensiero's
"Hudson Valley Mediterranean: The Gigi
Good Food Cookbook" could be shortened
to just "The Good Food Cookbook." Yes,
the recipes are tied to New York’s
Hudson Valley and traditional
Mediterranean dishes, but good is the
operative word -- good on the
pocketbook, good for your health, good
looking on the plate and deliciously
good going down.”

"Culinary Capital: Rhinebeck has
Become the Hudson Valley Dining Destination"
If one restaurant gets credit for starting
the trend, it is Gigi's Trattoria. Owner
Laura Pensiero, a French Culinary
Institute graduate, registered dietitian and
cookbook author, opened her sophisticated
yet casual restaurant on Montgomery Street
(Route 9) in September 2001, two weeks after
the most horrific day in modern American
history.
It was a hit from the get-go. Locals and New
Yorkers who had fled the city after 9/11
were thrilled to come to a fun, lively
restaurant featuring ingredients from Hudson
Valley farms.
"The timing of the opening of Gigi's was
absolutely perfect," Pensiero says. "It was
what what people wanted at that moment."
